POKOTABI / Bar Musashi
BAR武蔵
Tucked underground in Ginza 8-chome, Bar Musashi serves Miyagikyo and wasanbon-infused whisky sours, seasonal fruit cocktails, and a deep selection of domestic whiskies in a serene, welcoming room.
01 / ABOUT THE PLACE
Behind an understated door in a Ginza 8-chome building, a staircase leads down to Bar Musashi. Arranged with roughly 10 seats across the bar counter and tables, the space carries an easy, hushed composure well suited to unhurried conversation or lingering over a drink on your own.
The back bar extends well beyond conventional spirits, showcasing thoughtful original cocktails built around domestic produce. The Japanese Whisky Sour blends the soft profile of Miyagikyo single malt with fresh Japanese lemon juice, egg white, and wasanbon sugar syrup, shaken into a velvety, gently sweet pour. Classic templates also receive nuanced regional touches, as seen in the King Of Kings, which pairs Kyoto's craft gin KI NO BI with Noilly Prat, Lillet Blanc, and house-made yuzu bitters.
Seasonal citrus and fruit also drive the drinks list. Highlights include the Karami Margarita, balancing Miyazaki hebesu citrus and tequila with a dusting of hebesu-infused chili pepper, and the house Musashi Bloody Mary laced with basil-infused vodka, offering drinks built on layers of spice and aroma. Beyond the printed signatures, the bartenders are happy to tailor something on the spot based on your mood and flavor preferences.
The Japanese whisky selection runs exceptionally deep, featuring age statements like Yamazaki 12 Year Old and Hakushu 12 Year Old, limited bottlings from Ichiro's Malt, and long-aged single casks. Alongside the pours, a food menu featuring jamón ibérico, sardine gratin, and bacon steak makes it easy to settle in and savor the evening at an unhurried pace.
Open from Monday through Saturday until 2:00 the following morning, the bar offers a reliable late-night haven when you want to take your time exploring spirits after dinner.
